David Burke & Donatella's Classic Gazpacho

Raw soups are an easy way to turn ordinary ingredients into something special. But, this soup need not be made for any reason other than the fact that it tastes delicious. 


Here, I chopped deep purple basil for a colorful garnish.  


David Burke & Donatella's Classic Gazpacho


5 large tomatoes, quartered
1/2 cucumber, peeled, seeded, and chopped
1/2 red bell pepper, chopped
2 cloves garlic
2 tablespoons coarse or kosher salt
1 teaspoon cayenne pepper
1/2 cup olive oil


Place all the ingredients in a food processor and blend until finely pureed. Depending on the size of your processor, you may have to do this in two or more steps.


Makes 4 servings
