A Raw Dinner, Asian Style

Clockwise from top: Japanese "Rice,"
Arame Salad, and Spring-in-Your-Step Rolls.
Last night was a palate-pleasing medley of fresh herbs, tangy seaweed, and sweet, sticky rice. Filling and full of vitamins and minerals, I ate to my stomach's content and enjoyed subsequent gain, not loss, of energy.

Japanese "Rice*" has so many health benefits compared to its cooked counterpart. While white rice, with its refined, bleached, simple-carbohydrate properties, turns immediately to sugar after eating, this raw version, which tastes much sweeter, leaves out the sugar and delivers vitamins A, C and K, plus a whopping amount of folate.**

Sea vegetables are a staple in any vegetarian or vegan diet. Arame is packed with calcium, iron, iodine, and cancer-fighting lignans. It tastes good, too! It's mild with a hint of saltiness and pairs well the vinegar-based dressing in Arame Salad*.

The freshness of Spring in Your Step Rolls* rounded out the meal beautifully. They are great with Teriyaki Dipping Sauce* or Amazing Raw Peanut Sauce,* shown here.

**Parsnips and Pine Nuts are exceptionally high in folate and, therefore, good to eat if you're a woman of childbearing age: http://ods.od.nih.gov/factsheets/folate/
