This pesto is delicious, traditional- tasting, and nut-free, making it combinable with every food group save fruit. Serve it over raw zucchini pasta or on raw crackers.
Raw Neutral Pasta Pesto
3 cups whole fresh basil
2 cloves garlic
5 teaspoons olive oil
1 teaspoon Celtic sea salt (or to taste)
1 large zucchini
2 Roma tomatoes, chopped
Blend in a food processor (Vitamix recommended). Makes about 1/2 cup.
